Chinese
Check out my Singapore Noodles (from Hong Kong). They look more like Pad Thai — I'll do better next time.

French
Though not used in this dish, I've recently found persillade (and tarragon) to be indispensible for levelling-up chicken. I look forward to digging more into French cuisine during my next trip. (Pictured: coq au vin)

Japanese
Check out my homemade California Rolls. I was lucky to try Wagyu beef and fugu (pufferfish) during my 2023 trip to Japan — but my favourite was their unagi (freshwater eel).

Middle Eastern
Try mashing canned chickpeas with sesame seeds and olive oil for a cheap and easy derivative of hummus.

I've tried for years to steal their secret pancake recipe but I just can't crack the technology!
